Recipe: Smoothies

Smoothies: I freeze the yogurt recipe above in ice cube trays for smoothies. We add whatever fruit we have but strawberries and bananas are our favorite. I also put about ¼ cup of frozen spinach or kale, apple juice, and sometimes a little bit of raw sugar or maple syrup, though they are usually sweet enough without it. This is a sample recipe, but really you can add anything you like to it. We drink smoothies most days for snack.

Purple Puree: This recipe is not the same as “The Sneaky Chef’s”, but I did get the idea from her. The spinach/kale wasn’t breaking down well in the blender and the kids didn’t like flecks of green, so I tried this and it works well. Equal parts spinach/kale, blueberries and water and a tablespoon of lemon juice.  Boil it for a minute or two and then blend well (food processor is better). Freeze in ice cube trays and pop them into your smoothies.
