Recipe: Homemade Tortellini Soup
Tortellini Soup: Saute 2 cloves garlic and ½ small onion diced in 1 TS of olive oil. Add 4 cups vegetable or chicken broth, 8 ounces of cream cheese, 2 cans of Italian diced tomatoes, 1 bag of spinach, 1 cup chopped carrot (optional), 1 can white kidney beans (optional) and one bag of frozen tortellini. Simmer for 30 minutes. Serve with Parmesan cheese. (This recipe can be done in the crock pot as well).
