Recipe: Homemade Chocolate Cake
Chocolate cake: Combine 3 cups flour, 2 cups sugar, 6 TB cocoa, 2 ts baking soda, 1 ts salt. Add to dry mix 2 ts vanilla, ¾ cup oil, 2 TB vinegar, 2 cups cold water. Mix and add chocolate chips. Bake at 350 degrees for 30 minutes. Chocolate frosting: ½ cup butter (soft), whip together with 3 cups powdered sugar, 2 TB cocoa, 3 TB or more of milk – until the consistency is what you want it to be.

Meatballs: 2 pounds ground beef (I use a meatloaf mix and ground turkey), 1 cup bread crumbs (Italian flavored), ½ cup grated Romano cheese, 4 jumbo eggs, 1 teaspoon parsley, 2 teaspoon garlic, salt and peppers, 2 TB olive oil. Mix all ingredients together. Roll in balls and bake at 350 degrees for 20 minutes or until cooked through.

Tortellini Soup: Saute 2 cloves garlic and ½ small onion diced in 1 TS of olive oil. Add 4 cups vegetable or chicken broth, 8 ounces of cream cheese, 2 cans of Italian diced tomatoes, 1 bag of spinach, 1 cup chopped carrot (optional), 1 can white kidney beans (optional) and one bag of frozen tortellini.
