Recipes: Homemade Meatballs
Meatballs: 2 pounds ground beef (I use a meatloaf mix and ground turkey), 1 cup bread crumbs (Italian flavored), ½ cup grated Romano cheese, 4 jumbo eggs, 1 teaspoon parsley, 2 teaspoon garlic, salt and peppers, 2 TB olive oil. Mix all ingredients together. Roll in balls and bake at 350 degrees for 20 minutes or until cooked through.

Tortellini Soup: Saute 2 cloves garlic and ½ small onion diced in 1 TS of olive oil. Add 4 cups vegetable or chicken broth, 8 ounces of cream cheese, 2 cans of Italian diced tomatoes, 1 bag of spinach, 1 cup chopped carrot (optional), 1 can white kidney beans (optional) and one bag of frozen tortellini. Simmer for 30 minutes. Serve with Parmesan cheese. (This recipe can be done in the crock pot as well).

Granola: Combine: ¼ cup honey or maple syrup, ¼ oil, 3 cups rolled oats (not quick oats), ½ cup wheat germ, ½ cup sunflower seeds, ½ cup nuts (optional), ½ teaspoon cinnamon in a large bowl. Spread on a high edged cookie sheet. Bake at 300 degrees for 20 minutes, stirring after 10. Store in air tight container.

Yogurt: Pour 1 gallon of milk into a crock pot on low heat (About 180 degrees. If it gets too hot it will curdle and you will have cottage cheese) for 3 hours. The milk should be organic preferred, not ultra-pasteurized. I have tried both whole and 2%. The 2% was watery so I stick with whole milk. Turn heat off and let cool for 3 hours. Add 1 cup of plain yogurt (I also add a little bit of vanilla extract). Wrap the crock pot in a large beach towel and let it sit overnight (8 – 12 hours)....
